Makes one large pizza to serve 2
Ingredients for crust:
Cauliflower 1 small
Ground Almonds 50g
Break cauliflower into small florets and pulse in a processor until it resembles rice. Spread this out thinly on a large greased baking tray (or one lined with greaseproof paper) and bake for 15 minutes at 180
Cool slightly and mix with ground almonds and beaten egg. Spread out on greased pizza tray in a circle and bake for 10 -12 minutes. Meanwhile lightly fry pizza toppings such as onions and mushrooms.
Remove from oven and spread with pizza topping of choice. I used tomato puree and mixed herbs plus tomatoes, olives, parma ham, baby mozzarella balls, onions and mushrooms.
Return to the oven and bake for another 10 minutes. Serve with salad.
