INGREDIENTS – makes about 25


  1. Add the apple rings, apricots, vanilla, lemon juice, lemon zest (reserving 1 teaspoon for later), and coconut oil to a food processor. Process on high until thoroughly combined and sticky, about 1-2 minutes. Set aside.
  2. In a small bowl, combine the shredded coconut, sea salt, and reserved lemon zest and stir to combine.
  3. Using your hands, form the apple mixture into small balls, about the size of 2 tablespoons, and roll through the coconut mixture before placing on a plate. Once all of your “bites” are formed, place them in the refrigerator for 20 minutes to harden. Keep refrigerated before serving, or they will be tacky
