Healthy Christmas Cake
- Replace ordinary flour with wholemeal or gluten free flour
- Replace some of the flour with grated apple and carrot
- Use Stevia instead of sugar (you will need much less weight for weight as it is lighter and sweeter than sugar)
- Use real butter not marg
- Add in some chopped nuts
- Omit the marzipan and drizzle with icing rather than cover thickly

- Use filo pastry instead of shortcrust
- Make your own mincemeat with chopped apple, raisins and nuts
