Healthy Christmas Cake

  • Replace ordinary flour with wholemeal or gluten free flour
  • Replace some of the flour with grated apple and carrot
  • Use Stevia instead of sugar (you will need much less weight for weight as it is lighter and sweeter than sugar)
  • Use real butter not marg
  • Add in some chopped nuts
  • Omit the marzipan and drizzle with icing rather than cover thickly

  • Use filo pastry instead of shortcrust
  • Make your own mincemeat with chopped apple, raisins and nuts
