This is a case of juice = cake! After juicing 6 carrots, 1 apple and 1 beetroot, I made the pulp into a delicious cake


Vegetable pulp as above (or grate and squeeze out excess moisture)

6 medium peeled carrots

1 peeled beetroot

1 peeled apple


  • quarter cup of melted coconut oil (or butter)
  • 1 egg
  • 2 teaspoons of molasses (this black treacle is high in iron and minerals and low GI)

Mix well, then stir in:

  • 2 tablespoons of ground almonds
  • Half cup of self raising wholemeal flour or SR Gluten free flour (such as Doves)

Bake at 180 for 30 minutes 07767260374
