Heat oven to 170

 2 oz coconut oil

1 oz of stevia or xylitol

–         Cream together

1 egg

1 heaped dessert spoon of almond or peanut butter (optional)

1 finely chopped apple

Half very ripe banana

Half grated carrot

–         Beat in

2 oz SR wholemeal flour or SR gluten free flour

2 tsps cinnamon

1 tsp vanilla extract or vanilla pod

–         Mix gently

Pour into greased or lined 1lb loaf tin, sprinkle with stevia or xylitol and flaked almonds  and bake for 40 minutes

Take out of oven, once cool make some holes with skewer and dribble in fresh squeezed lemon or orange
