Slice a sweet potato lengthways 1/4 inch thick, prick several times with a fork and microwave for 20-30 second.  Then toast on high  for the maximum time

• 1 dsp Pesto, ½ avocado and grated carrot
• 1 dessert spoon Humus, sprinkle pumpkin seeds
• Tuna with mayo and spring onions
• Nut butter with cucumber
• With fried or scrambled egg and chives
• Mashed avocado and bacon
• Almond or peanut butter and banana
• Tuna, cucumber and mayo with celery / spring onions
• Cottage cheese, walnuts and a drizzle of maple syrup

Serve with lots mixed salad
