Apricot Coconut Bites

For a convenient snack that is simple to prepare and nutritious, these are an excellent choice. Packed with Vitamin A and fibre, they promote a healthy digestive system.
INGREDIENTS – makes about 25

Prep Time: 10 minutes
Chill Time: 20 minutes
Ingredients:
3 cups organic dried apricots (sulphur-free)
1 cup organic dates, pitted (sulphur-free)
¼ teaspoon vanilla essence (or extract)
1 cup organic shredded coconut (unsweetened)
1 pinch sea salt
Instructions:
Blend the fruit:Add the dried apricots, dates, and vanilla to a food processor. Blend on high for 1–2 minutes, or until the mixture is fully combined, sticky, and forms a thick paste.
Prepare the coating:In a small bowl, mix the shredded coconut with a pinch of sea salt. Set aside.
Form the bites:Scoop about 2 tablespoons of the apricot mixture and roll into balls using your hands. Repeat until all the mixture is used (makes about 25 bites).
Coat and chill:Roll each ball in the coconut-salt mixture until evenly coated. Place the finished bites on a plate or tray.
Refrigerate:Chill in the refrigerator for at least 20 minutes to firm up. Keep refrigerated until ready to serve, as they may become tacky at room temperature.
Storage:
Refrigerator: Up to 1 week in an airtight container
Freezer: Up to 3 months
Optional Add-ins:
1 tablespoon chia seeds or flaxseeds for extra fiber
Zest of 1 orange for a citrus twist
A handful of chopped nuts for texture
