INGREDIENTS – makes about 25
3 cups organic dried apricots (sulphur free)
1 cup organic dates (sulphur free)
¼ tsp vanilla essence
1 cup shredded coconut organic
A pinch of sea salt
INSTRUCTIONS
Add the apricots and vanilla, to a food processor. Process on high until thoroughly combined and sticky, about 1-2 minutes. Set aside.
In a small bowl, combine the shredded coconut and sea salt, and stir to combine.
Using your hands, form the apple mixture into small balls, about the size of 2 tablespoons, and roll through the coconut mixture before placing on a plate. Once all of your "bites" are formed, place them in the refrigerator for 20 minutes to harden. Keep refrigerated before serving, or they will be tacky
