This is a common problem when working with my clients.  If you’re working all day and getting in late who want to start cooking natural wholesome food from scratch…..ready meals and takeaways beckon!  Here’s how to do it:

  1. Order your weekly shop from the internet and get an organic veg box delivered.  I’m lucky enough to have get a box from Westmill Organics (01793 783569) who cover Swindon, Shrivenham, Lambourn and Aldbourne) but there are plenty out there if you are prepared to cook seasonally
  2. Invest in a slow cooker.  Using stew pack vegetables and cheaper cuts of meat you can shove all this in before you go to work with stock, wine or passatta
  3. Ensure you always have eggs, prawns, frozen stir fry, peas, cooked sachets of Quinoa or rice (Merchant foods / Tilda).  Using these you can make instant omelette and peas, prawn stir fry with quinoa
  4. Batch cook mince, soups, vegetable curries etc at the weekend and freeze for busier days
  5. Always have rocket / spinach and tomatoes.  These can be thrown in the pan with eggs on wholemeal toast for a quick nutritious meal
  6. Roast a larger whole chicken on Sunday and use up the following days as (a) chicken curry (using curry paste and natural yoghurt) (b) chicken stir fry with frozen stir fry vegetables (and a sauce made from soy sauce and balsamic vinegar) (c) in a salad with toasted walnuts and avocado
  7. Plan your food for the week ahead and making a shopping list accordingly so that you’re not resorting to takeaways
